Mushrooms have been part of healing traditions around the world for centuries, & by now we know a ton about their myriad of benefits. Adaptogens that help reduce stress & balance hormones, these little fun-guys {pun-intended!} are having a bit of a Renaissance recently.

Fantastic Fungi contain Beta-Glucans, which is a type of Fiber that acts as the mushroom’s immune system.  When you eat them, their immune system augments your own! Immune System Ninjas! 💪🏽

They also contain Ergothioneine, a potent antioxidant that can protect your cardiovascular health & reduce the risk of metabolic syndrome.  For these reasons, Mushrooms are an all important tool for combatting PCOS, with the highest levels of Ergothioneine being found in Oyster, Maitake, o & Shiitake varieties.😎

Research has shown that Lion’s Mane Mushrooms are known to improve anxiety, cognitive function, & depression.{possibly due to enhancing the growth of axons & dendrites}. 🧠

Cordyceps & Reishi, known in TCM as the “Mushroom of Immortality”, can inhibit tumor growth, bolster the immune system, strengthen adrenal qi, & enhance longevity.  They also promote deeper sleep! 😴

Want some Healthy Home Recipes to try?  Below are my Shroom Noodles & Chaga Chunk Tea Recipes. Enjoy! 🤗

Shroom Noodles
Serves 6-8 people, or 2 with lots of leftovers!

Ingredients:
2 tsp of Extra Virgin Olive Oil
6 Medium Shallots Chopped
1 Bunch Swiss Chard Chopped
1 Lb Crimini Mushrooms Sliced
⅓ Lb Shiitake Mushrooms Sliced
6 Cloves Garlic Minced
1&½ Lbs Lean Ground Turkey Breast
Sea Salt to taste

Directions:
1} Bring 3 Quarts of Water to a rolling boil {we call that a royal- get it? haha} in a Large Cooking Pot.  Cook pasta on high heat for 10 minutes, stirring frequently.  Drain pasta in a colander & put back into pot. 

2} Bring a SautĂŠ Pan or Skillet to Medium Heat.  Add the EVOO & give it a swirl so it's evenly coated.  Add the Ground Turkey, allow it to brown, occasionally stirring & breaking up the chunks as it cooks.  Drain any excess liquid at the end.

3} In a Large SautĂŠ Pan, add the shallots & 1 tsp Extra Virgin Olive Oil.  Then turn on medium-low heat.  Stir occasionally & cook just until translucent.  Add the Swiss Chard & the Mushrooms.  Cook on Medium heat just until soft.  Add the garlic, mix generously & cook for 1-2 more minutes.  

4} Combine Turkey & Veggies with the Pasta in the Large Pot.  Return to Medium heat as you add the pasta sauce, umami blend, black pepper essential oil & optional sea salt.  When ingredients are warmed, they're ready to be served.

5} Optional Toppings: Sprigs of Thyme or Oregano, Nooch, Olives, Red Pepper Flakes or Truffle Hot Sauce!

Recipe Notes:
In our family, we love our veggies al dente & our cuisine strongly flavored.  If you like softer veggies, cook them a little longer until desired firmness is reached.  If you find the garlic a bit too much for your taste, reduce the amount by half & add it in with the shallots.  This will reduce the pungency.  
We also love to make big batches of our favorites so we have leftovers throughout the week. 😎
You can make this Recipe Vegan by omitting the ground turkey or substituting some Tofu.  
→ Like strong flavors?  Kick the Shroom content up a notch with TRUFF Black Truffle Infused Hot Sauce!  NomNom.
→ Want it to be "Cheezy?"  Add ½ Cup of Nooch- Bragg's Nutritional Yeast
→ Want to increase your healthy fats? Add some pitted Kalamata or Castelvetrano Olives
For this pictured version, we used bow tie pasta instead of noodles.  You can substitute any 12 oz. box of Gluten-Free pasta of your choosing.  Happy "Shrooming!"

Directions:
First get yourself some Wild Siberian Raw Chaga Chunks

→Option 1- Instant Chaga Tea
Grind up the chunks & steep in boiling water with a French press or in tea strainer for 10 minutes. An instant Chaga Brew.

→Option 2- Chaga Chunk Brew
In a small crockpot, add boiling water to fill & set it on low.
Drop in 1 Chaga Chunk
Once the water becomes a rich, chocolate color {usually a few hours} the tea is ready to drink.
It tastes the best & has it's fullest flavor after steeping overnight, which is mostly nutty with a little earth & sweetness.
Ladle out the tea as desired & replace what you take with more water.  
When the water starts to lose it’s opacity, the chunk is done.  1 Nugget usually lasts 3 days to a week.
Pro Tip:  Add Lemon Peels & Cacao Nibs to the brew pot for d-Limonene & added flavor! 🍋
